BEIJING DUCK
This sophisticated dish is one of the signature menu pieces at Hwa Yuan.
Our ducks are prepared in advance by initially pumping in dry, cold air to stretch and loosen the skin, with boiling water repeatedly basted over the birds.
The ducks are then carefully dried and rubbed with maltose before being slow roasted in a cylindrical oven for hours, until the meat is tender and the skin is crispy.
Served with crêpes, sliced crispy Chinese pears, fresh cucumber & scallion slices, and Hoisin sauce.
